Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onions, garlic, carrots, and celery until vegetables are tender.
- Add shredded chicken, chicken broth, diced tomatoes, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
- Serve hot, topped with grated Parmesan and chopped parsley.
