- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 2 apples, diced
- 1/4 cup honey or maple syrup

Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Let the sweet potatoes cool slightly, then cut in half and scoop out the flesh into a bowl.
- In a mixing bowl, combine sweet potato flesh, cranberries, diced apples, honey, cinnamon, nutmeg, and salt. Mix well.
- Stuff the mixture back into the sweet potato shells.
- Place stuffed sweet potatoes on a baking sheet, drizzle with olive oil, and bake for an additional 15 minutes until heated through and slightly caramelized.
- Garnish with fresh parsley before serving.

- For added crunch, sprinkle with chopped nuts before baking.
- You can substitute honey with agave syrup for a vegan option.
