- 2 large sweet potatoes, peeled and cubed

- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme

- 1 cup shredded cheese (optional)

Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and cook for 1 minute.
- Stir in ground turkey, smoked paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- Meanwhile, toss sweet potato cubes with remaining olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly crispy.
- Spread roasted sweet potatoes in a baking dish. Top with cooked turkey mixture. Sprinkle with shredded cheese if using.
- Bake in the oven for 15 minutes until cheese melts and bubbly.
- Garnish with fresh parsley and serve hot.
