- 4 large carrots, peeled and chopped

- 1 teaspoon honey or maple syrup

Instructions
- Boil the chopped carrots in salted water until tender, about 10-12 minutes. Drain well.
- In a bowl, mash the cooked carrots with a fork or potato masher until slightly chunky.
- Drizzle with olive oil, honey or maple syrup, and lemon juice. Mix well to combine.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving.
