A nutritious and flavorful vegetarian pasta Shells stuffed with a creamy ricotta and spinach filling, then baked until golden and bubbly.

Ingredients

  • 20 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup chopped fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Cook pasta shells according to package instructions. Drain and set aside.
  3. In a bowl, mix ricotta, chopped spinach, Parmesan, egg, salt, and pepper until well combined.
  4. Stuff each shell with the ricotta mixture and place them in the prepared baking dish.
  5. Pour marinara sauce evenly over the stuffed shells.
  6. Cover with foil and bake for 25-30 minutes until bubbly and heated through.
  7. Remove from oven, garnish with extra Parmesan or herbs if desired, and serve hot.
