- 2 large sweet potatoes, peeled and cubed
- 1 pound ground turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add onion and garlic; sauté until translucent.
- Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- Meanwhile, toss sweet potato cubes with remaining olive oil and season with salt and pepper.
- Spread sweet potatoes evenly in a baking dish. Layer cooked ground turkey mixture on top.
- Bake for 25-30 minutes until sweet potatoes are tender and slightly caramelized.
- Garnish with chopped fresh parsley before serving.
Notes
- You can add some shredded cheese on top before baking for extra flavor.
- For a spicy kick, sprinkle red pepper flakes over the turkey mixture.
