- 1 pound smoked sausage, sliced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup chopped green onions
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- In a skillet over medium heat, cook sliced smoked sausage until lightly browned.
- In a bowl, combine roasted potatoes, cooked sausage, ranch dressing, and half of the shredded cheese. Mix well.
- Transfer the mixture to a greased baking dish. Top with remaining cheese and chopped green onions.
- Bake uncovered for 20-25 minutes until bubbly and golden brown.
Notes
- For a quicker prep, you can add raw sausage directly to the bake without pre-cooking.
- Use cooked chicken or turkey sausage as a leaner alternative.
