- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups diced potatoes
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup chopped green onions
- 4 slices cooked bacon, crumbled
- Salt and pepper to taste
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic; cook until softened.
- Stir in diced potatoes and cook for 5 minutes.
- Pour in beef broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Reduce heat to low; stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and crumbled bacon.
Notes
- For a thicker soup, mash some potatoes in the pot before serving.
- Use cooked bacon for added flavor and crunch.
