- 1 lb ground beef or beef stew meat
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 1 cup corn kernels
- 1 cup diced bell peppers
- 4 cups beef broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions and shredded cheese for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Remove excess fat.
- Add diced onions and minced garlic to the pot, sauté until translucent.
- Stir in diced potatoes, bell peppers, and smoked paprika. Cook for another 5 minutes.
- Pour in beef broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Add heavy cream and corn, stir well, and cook for an additional 5 minutes.
- Season with salt and pepper, then serve hot garnished with chopped green onions and shredded cheese.
Notes
- For extra flavor, add diced jalapenos or hot sauce.
- Use pre-cooked beef or leftover roast for quicker preparation.
