- 1 pound ground beef or turkey
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup marinara sauce
- 8 no-boil lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh basil and parsley for garnish
Instructions
- In a large pot, cook ground meat over medium heat until browned. Add chopped onion and garlic; cook until translucent.
- Pour in broth, diced tomatoes, and marinara sauce. Bring to a boil.
- Add broken lasagna noodles and reduce heat to simmer. Cook until noodles are tender, about 15 minutes.
- Stir in ricotta cheese, then sprinkle mozzarella and parmesan on top. Cover and cook until cheese melts.
- Garnish with fresh basil and parsley. Serve hot with crusty bread if desired.
Notes
- You can substitute ground turkey or chicken for beef for a leaner option.
- For added spice, include red pepper flakes during cooking.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
