- 1.5 pounds boneless, skinless chicken breasts
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add carrots, potatoes, onion, garlic, peas, thyme, paprika, salt, and pepper.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken in the stew and stir well before serving.
Notes
For a thicker stew, add a cornstarch slurry toward the end of cooking. Feel free to customize vegetables based on preference or seasonality.
