- 1/2 cup powdered sugar

Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk eggs and sugar until fluffy. Add vanilla and mix well.
- Gently fold in flour until just combined.
- Pour batter onto prepared baking sheet and bake for 12-15 minutes until golden.
- While warm, invert cake onto a clean towel dusted with powdered sugar. Carefully peel off parchment and roll cake with towel. Let cool.
- In a bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Unroll cooled cake, spread the cheesecake filling evenly, and scatter cherries over the top.
- Reroll the cake tightly, dust with powdered sugar, and garnish with additional cherries if desired.
Notes
- Use fresh cherries for better flavor. You can substitute with thawed frozen cherries.
- Ensure the cake is completely cooled before filling to prevent cracking.
- Chill the rolled cake for at least 1 hour before serving for best results.
