Scale
- 3 ripe bananas, mashed
- 1 cup Greek yogurt
- 2 large eggs
- 1/2 cup honey or maple syrup
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper. Mash the ripe bananas until smooth.
- In a separate bowl, whisk together the eggs, Greek yogurt, and honey until well combined.
- Combine the mashed bananas with the wet ingredients. In another bowl, whisk together the whole wheat flour, baking soda, cinnamon (if using), and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid over-mixing.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
- Freezes well—slice and store in freezer bags for quick snacks.
