- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup Irish whiskey
- 1 cup heavy cream
- 2 teaspoons Dijon mustard
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then sear for 6-7 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté onions and garlic until translucent.
- Pour in whiskey, scraping up browned bits from the bottom of the pan, and cook for 2-3 minutes to reduce slightly.
- Stir in heavy cream and Dijon mustard, simmer until sauce thickens, about 5 minutes.
- Return chicken to the pan, coat with sauce, and heat through.
- Garnish with chopped parsley and serve hot.

- Adjust whiskey amount for desired flavor intensity.
- Serve with mashed potatoes or buttered vegetables for a complete meal.
