  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 2 teaspoons Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then sear for 6-7 minutes on each side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté onions and garlic until translucent.
  4. Pour in whiskey, scraping up browned bits from the bottom of the pan, and cook for 2-3 minutes to reduce slightly.
  5. Stir in heavy cream and Dijon mustard, simmer until sauce thickens, about 5 minutes.
  6. Return chicken to the pan, coat with sauce, and heat through.
  7. Garnish with chopped parsley and serve hot.
