- 4 large russet potatoes, thinly sliced
- 2 large yellow onions, thinly sliced
- 2 cups shredded Gruyere cheese
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 2 teaspoons fresh thyme, chopped
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, thyme, salt, and pepper. Cook until caramelized, about 20 minutes, stirring occasionally.
- Layer half of the sliced potatoes in a greased baking dish. Spread half of the caramelized onions over the potatoes, then sprinkle with 1 cup of cheese.
- Repeat layers with remaining potatoes, onions, and cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 10 minutes until golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
- Use thinly sliced potatoes for even cooking.
- You can substitute Gruyere with sharp cheddar or Swiss cheese.
- Make ahead and refrigerate for up to 24 hours before baking.
