- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh chives
- 1 teaspoon garlic powder
- Salt and pepper to taste

- 2 eggs
- 1 cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheddar, Parmesan, chives, garlic powder, salt, and pepper. Mix well.
- Shape the mixture into small, bite-sized balls and set aside.
- Prepare a breading station: place flour in a shallow dish, beaten eggs in another, and panko breadcrumbs in a third.
- Roll each potato ball in flour, dip in eggs, then coat with panko breadcrumbs.
- Heat vegetable oil in a deep fry pan over medium heat. Fry the puffs until golden brown and crispy, about 3-4 minutes.
- Drain on paper towels and serve warm with your favorite dipping sauce.
