Ingredients

  • 2 cups cooked mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar, Parmesan, chives, garlic powder, salt, and pepper. Mix well.
  2. Shape the mixture into small, bite-sized balls and set aside.
  3. Prepare a breading station: place flour in a shallow dish, beaten eggs in another, and panko breadcrumbs in a third.
  4. Roll each potato ball in flour, dip in eggs, then coat with panko breadcrumbs.
  5. Heat vegetable oil in a deep fry pan over medium heat. Fry the puffs until golden brown and crispy, about 3-4 minutes.
