- 1 lb boneless chicken breast, cooked and shredded
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 1 cup kale or spinach, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
- Add chicken broth, dried oregano, salt, and pepper. Bring to a boil.
- Reduce heat and add shredded chicken and chopped greens. Simmer for 10 minutes to blend flavors.
- Serve hot, topped with grated Parmesan cheese and fresh herbs if desired.
Notes
- You can substitute cooked turkey or tofu for added variety.
- For extra immunity-boosting, add a splash of lemon juice before serving.
