Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, season chicken breasts with salt, pepper, oregano, and thyme.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear chicken for 2-3 minutes on each side until golden.
- Arrange chicken, zucchini slices, cherry tomatoes, and olives in a baking dish.
- Drizzle remaining olive oil and minced garlic over the ingredients.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Garnish with chopped parsley before serving.
