- 8 oz pasta (penne or fusilli)
- 2 grilled chicken breasts, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, grilled chicken slices, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Garnish with chopped parsley and serve immediately or chilled.
Notes
- You can substitute grilled shrimp or tofu for the chicken to make it vegetarian or seafood-based.
- Prepare the salad ahead of time and refrigerate for 30 minutes for extra flavor.
