Instructions
- In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Mix well to create a flavorful spice blend.
- Place the sliced chicken in a large bowl, add 1 tablespoon of olive oil, the spice mixture, and lime juice. Toss to coat evenly. Let it marinate for at least 10 minutes, or up to 30 minutes for deeper flavor.
- Preheat your oven to 400°F (200°C). Spread the marinated chicken, sliced peppers, and onions evenly on a large baking sheet. Drizzle with the remaining 1 tablespoon of olive oil.
- Place the sheet in the oven and roast for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender. For a slight char, broil for an additional 2-3 minutes.
- Remove from oven, sprinkle with fresh cilantro if desired, and serve hot with warm tortillas. Garnish with your favorite toppings like cheese, sour cream, or guacamole.
