- 1 lb ground beef
- 1 cup orzo pasta
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté until translucent.
- Add ground beef; cook until browned. Season with salt and pepper.
- Stir in orzo pasta and cook for 1-2 minutes.
- Pour in beef broth; bring to a boil. Reduce heat, cover, and simmer for 10 minutes until pasta is cooked and liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese until melted and creamy.
- Garnish with diced tomatoes and chopped green onions before serving.
Notes
- Feel free to add pickles or bacon for extra flavor.
- Make it spicy by adding diced jalapeños.
