- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups beef or chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground beef (or turkey) and cook until browned. Break it apart with a spatula as it cooks. Add diced onion and cook until translucent. Season with salt, pepper, and paprika.
- Add garlic to the cooked meat and sauté for about 1 minute. Stir in the orzo pasta and cook for 2-3 minutes until lightly toasted.
- Pour in broth and diced tomatoes. Stir well, bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes until orzo is tender and liquid is mostly absorbed.
- Uncover the skillet and stir in shredded cheese. Cook for another 2-3 minutes until melted and creamy. Adjust seasoning if needed.
