Instructions
- Preheat a skillet over medium heat and brush lightly with olive oil.
- Place one tortilla on the skillet and evenly sprinkle with cheese and pepperoni.
- Top with the second tortilla and cook for about 3-4 minutes until golden brown.
- Carefully flip and cook the other side until crispy and cheese is melted.
- Remove from skillet, let cool slightly, then cut into wedges and garnish with herbs if desired.
