- 2 lbs (900g) boneless, skinless chicken breasts, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- In a small bowl, mix chili powder, paprika, cumin, garlic powder, salt, and pepper.
- Brush chicken slices with 1 tablespoon olive oil and sprinkle with spice mixture.
- Arrange chicken, peppers, and onions on the sheet pan.
- Bake for 20-25 minutes until chicken is cooked through and vegetables are tender.
- Remove from oven, squeeze lime juice over, and garnish with cilantro if desired. Serve with tortillas or on their own.

- For extra flavor, marinate chicken in spices and lime juice for 30 minutes before cooking.
