Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

- In a separate bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla, mixing well.
- Gradually add dry ingredients, mixing until combined.
- Fold in chopped apples.
- Form dough into 1-inch balls, roll in cinnamon sugar, and place on baking sheet.
- Bake for 8-10 minutes or until golden brown.
- Allow cookies to cool slightly before transferring to a wire rack.
