- 200g graham crackers or digestive biscuits, crushed
- 100g unsalted butter, melted
- 300g cream cheese, softened
- 200ml heavy cream
- 150g powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 2 ripe peaches, sliced
- Optional: fresh mint leaves for garnish
Instructions
- Crush the digestive biscuits into fine crumbs and mix with melted butter. Press evenly into the bottom of a springform pan. Chill for 30 minutes.
- Beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Spread the filling evenly over the chilled crust. Arrange sliced peaches, strawberries, and blueberries on top, pressing gently into the filling.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set and meld flavors.
