- 1 cup long-grain white rice
- 2 cups black beans (cooked or canned)
- 1 lb smoked sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook rice according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
- Add sliced sausage and cook until browned.
- Stir in garlic, cumin, paprika, salt, and pepper, cook for 1 minute until fragrant.
- Add black beans, and cook for 5 minutes to heat through.
- Serve the sausage and bean mixture over the cooked rice, garnish with fresh parsley.
Notes
- For added flavor, sprinkle some shredded cheese or hot sauce over the dish before serving.
- You can substitute sausage with vegetarian options for a meatless version.
