- 1 pound smoked sausage, sliced
- 1 cup dry black beans, soaked overnight
- 1 cup long-grain white rice
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until soft.
- Add soaked black beans, rice, paprika, salt, and pepper. Stir to combine.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes until beans and rice are tender.
- Stir in cooked sausage, heat through, and garnish with fresh herbs before serving.
Notes
- For extra flavor, add a dash of hot sauce or smoked paprika.
- You can substitute with Andouille sausage for a spicier kick.
