- 1 teaspoon ground cinnamon (for coating)

Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, sugar, vanilla, cinnamon, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until dough pulls away from the sides of the pan.
- Transfer dough to a piping bag fitted with a large star tip.
- Pipe small bite-sized pieces onto the prepared baking sheet.
- Bake for 15-18 minutes or until golden brown.
- Mix granulated sugar and cinnamon in a bowl.
- Remove churro bites from oven, immediately toss in cinnamon sugar mixture.
- Optional: drizzle with melted chocolate before serving.
