- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 cups cooked jasmine rice
- 1/4 cup mayonnaise
- 2 tbsp sriracha sauce
- 1 tbsp honey or maple syrup
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 green onions, sliced
- Sesame seeds for garnish
- Vegetable oil for frying
Instructions
- Preheat oil in a deep fryer or large skillet over medium-high heat.
- Toss chicken pieces in cornstarch until evenly coated.
- Fry chicken in hot oil until golden and crispy, about 5-7 minutes. Drain on paper towels.
- In a bowl, whisk together mayonnaise, sriracha, honey, soy sauce, and rice vinegar to make the spicy sauce.
- In a large bowl, toss the fried chicken with the spicy sauce until well coated.
- Serve the sauced chicken over cooked rice, garnished with sliced green onions and sesame seeds.
Notes
- Adjust the spice level by adding more or less sriracha sauce.
- For a healthier version, bake the chicken instead of frying.
