- 4 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks
- 1/2 cup brown sugar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 6-8 minutes per side.
- Remove chicken and set aside.
- Add garlic and ginger to the skillet; sauté for 1 minute.
- Stir in brown sugar, soy sauce, and pineapple chunks. Cook until the sauce thickens slightly and pineapples are caramelized.
- Return chicken to the skillet, coating with sauce. Cook for another 2-3 minutes to reheat and blend flavors.
Notes
- Adjust sweetness by adding more or less brown sugar.
- You can substitute chicken thighs for breasts for extra juiciness.
