- 2 eggs, beaten
- 1 cup walnuts, toasted
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon rice vinegar
Instructions
- Preheat oil in a deep fryer or large skillet to 350°F (175°C).
- Mix flour, cornstarch, salt, and pepper in a bowl. Dip shrimp into beaten eggs, then coat with the flour mixture.
- Fry shrimp in batches until golden and crispy, about 2-3 minutes. Drain on paper towels.
- In a saucepan, combine honey, soy sauce, lemon juice, and rice vinegar. Bring to a simmer.
- Add fried shrimp and toasted walnuts to the sauce. Toss gently to coat evenly.
- Serve immediately garnished with additional walnuts and fresh herbs if desired.
