Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange sweet potato slices on the prepared baking sheet. Brush with olive oil and season with salt and pepper.
- Roast for 20-25 minutes until edges are crispy and golden.
- Remove from oven and transfer to a serving platter.
- Top each round with crumbled feta and drizzle with honey.
- Garnish with fresh herbs if desired and serve immediately.
