Sweet & Savory Pineapple Chicken is the perfect combination of juicy chicken and caramelized pineapple, creating a flavorful, easy-to-make dinner that delights the senses. This dish features tender chicken breasts or thighs cooked in a rich brown sugar and soy sauce glaze, topped with fresh pineapple chunks and garnished with green onions or cilantro. Ideal for weeknight dinners or entertaining guests, this recipe offers a delightful balance of sweet and savory flavors with minimal effort.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup fresh pineapple chunks
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch (optional, for thickening)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped green onions or cilantro for garnish

Instructions

  1. Begin by seasoning the chicken with salt and pepper. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Sear the chicken on both sides until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  2. In the same skillet, add garlic and ginger. Sauté for about 30 seconds until fragrant. Stir in the brown sugar, soy sauce, and vinegar. Bring the mixture to a simmer, allowing the sugar to dissolve and the flavors to meld. For a thicker sauce, mix cornstarch with a teaspoon of water and add it to the skillet, stirring until the sauce thickens.
  3. Add the pineapple chunks to the skillet and cook for another 2-3 minutes until slightly caramelized. Return the chicken to the skillet, spooning the sauce over the top. Let everything cook together for another 5 minutes to absorb all the flavors.
  4. Garnish with chopped green onions or cilantro. Serve this sweet & savory pineapple chicken over steamed rice or your favorite side for a complete meal. Enjoy!

Notes

  • Use fresh pineapple for the best flavor, but canned pineapple works in a pinch.
  • Adjust the sweetness by increasing or decreasing the brown sugar to suit your taste.
  • For a smoky flavor, consider grilling the chicken instead of pan-searing.
  • Add bell peppers or snap peas for extra crunch and color if desired.
