- 4 boneless, skinless chicken breasts or thighs
- 1 cup fresh pineapple chunks

Instructions
- Begin by seasoning the chicken with salt and pepper. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Sear the chicken on both sides until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add garlic and ginger. Sauté for about 30 seconds until fragrant. Stir in the brown sugar, soy sauce, and vinegar. Bring the mixture to a simmer, allowing the sugar to dissolve and the flavors to meld. For a thicker sauce, mix cornstarch with a teaspoon of water and add it to the skillet, stirring until the sauce thickens.
- Add the pineapple chunks to the skillet and cook for another 2-3 minutes until slightly caramelized. Return the chicken to the skillet, spooning the sauce over the top. Let everything cook together for another 5 minutes to absorb all the flavors.
- Garnish with chopped green onions or cilantro. Serve this sweet & savory pineapple chicken over steamed rice or your favorite side for a complete meal. Enjoy!
