- 1 cup jasmine or long-grain rice
- 1 cup water or chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning or homemade blend
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, sliced jalapeños, cilantro
Instructions
- Rinse 1 cup of rice under cold water until the water runs clear. Combine with water or chicken broth in a pot or rice cooker and cook until fluffy.
- In a skillet over medium heat, add a tablespoon of oil. Sauté diced onion and garlic until fragrant. Add ground meat and cook until browned. Drain excess fat if needed. Sprinkle with taco seasoning and stir to coat evenly.
- Divide cooked rice into bowls. Top with seasoned meat, diced tomatoes, shredded lettuce, and cheese. Add your favorite toppings like sour cream or jalapeños for extra flavor.
