  • 1 1/2 cups packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Zest of 2 lemons
  • Juice of 2 lemons
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it. Chop strawberries and zest and juice lemons.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla, lemon zest, and lemon juice.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold dry ingredients into wet mixture until just combined.
  4. Gently fold chopped strawberries into the batter. Pour into prepared pan and spread evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes.
  6. Cut into squares, dust with powdered sugar if desired, and serve. For an extra touch, garnish with additional strawberries or lemon zest.
