Ingredients
Scale
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 package (9 oz) refrigerated or frozen ravioli (cheese or spinach-filled)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional for spice)
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley for garnish
- Optional: cooked chicken, sausage, or vegetables for added protein and texture
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the diced tomatoes with their juice and stir to combine. Cook for 2 minutes. Then, add the chicken or vegetable broth, stirring well. Bring the mixture to a gentle simmer.
- Stir in the heavy cream, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Allow the soup to simmer gently for about 10 minutes to develop the flavors.
- Gently drop the ravioli into the simmering soup. Cook according to package instructions, usually 4-6 minutes, until tender and cooked through. Be careful not to overcook to prevent breaking apart.
- Taste and adjust seasoning as needed. If adding cooked chicken or vegetables, stir them in now and simmer for an additional 2-3 minutes to heat through. Serve hot, garnished with fresh basil or parsley.
Notes
- For a gluten-free version, use gluten-free ravioli or substitute with vegetables like zucchini noodles or cooked chicken chunks.
- You can replace heavy cream with half-and-half, milk, or coconut cream for lighter options.
- Use vegetable broth for a vegetarian version of this soup.
- Add extra vegetables for more flavor and nutrition, such as spinach or bell peppers.
