- 1 lb ground beef (or turkey for a leaner option)
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced red onions
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Divide the ground beef into four equal portions, forming each into a rough ball.
- Heat a skillet over medium-high heat. Place each beef ball in the skillet and smash flat with a spatula. Season with salt, pepper, garlic powder, and onion powder. Cook each side for 3-4 minutes until browned and cooked through.
- Remove cooked burger patties from the skillet and set aside. Wipe the skillet if needed.
- Place a tortilla on the skillet over medium heat. Spread cheese over half of the tortilla, add a burger patty on top, sprinkle diced red onions, then add more cheese. Fold the tortilla and press gently to seal.
- Cook the assembled quesadilla for 2-3 minutes per side until golden brown and crispy, with melted cheese. Repeat with remaining quesadillas.
Notes
- For extra crispiness, increase heat slightly and press down on the quesadilla while cooking.
- To keep leftovers fresh, cool completely, then wrap tightly in foil or store in airtight containers. Reheat in microwave or skillet until crispy.
- Feel free to customize with different cheeses like mozzarella or pepper jack.
