Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, beat eggs, sugars, vanilla, and oil until smooth. Stir in grated zucchini.
- Gradually add dry ingredients to wet, stirring gently until just combined. Fold in nuts or chocolate chips if desired.
- Pour batter into prepared loaf pan. Bake for 55–60 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Drain excess moisture from zucchinis by salting and squeezing or pat dry after grating.
- Use fresh spices for a richer flavor.
- Add-ins like raisins or shredded coconut can enhance taste and texture.
