Ingredients
- 2 cups ripe mango chunks
- 1 cup coconut milk (full-fat for creaminess)
- 2 tablespoons honey or agave syrup (optional, for extra sweetness)
- 1 teaspoon lime juice
- Ice cube tray or popsicle molds
- Pop sticks or reusable sticks
Instructions
- Blend the ripe mango chunks with coconut milk, honey, and lime juice until smooth and creamy.
- Pour the mixture into popsicle molds, leaving space at the top for expansion.
- Insert pop sticks into each mold, ensuring they are centered and secure.
- Freeze for at least 4-6 hours or overnight until solid.
- To serve, run warm water over the outside of the molds to release the popsicles.
- Store leftovers in an airtight container in the freezer, wrapped with plastic wrap or reusable silicone covers to prevent ice crystals.
Notes
- Use frozen mango for a chilled, thicker texture if fresh mango isn’t available.
- Enhance flavor by adding shredded coconut or chopped nuts into the mixture.
- Make layered popsicles with different fruit purees for a colorful presentation.
- Adjust sweetness by modifying honey or agave syrup based on fruit ripeness and personal preference.
