Perfect for cozy mornings or teatime treats, this bread combines ripe bananas, aromatic cinnamon, and a tender crumb for a comforting and indulgent baking experience. Enjoy slices warm with butter or cream cheese for an irresistible dessert or breakfast option.

  • Total Time: 1 hour 15 minutes to 1 hour 25 minutes
  • Yield: 1 loaf (about 10 slices)

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon, divided
  • 2 tablespoons brown sugar
  • Optional: chopped nuts or chocolate chips

Instructions

  1. In a large bowl, combine the mashed bananas with melted butter. Add sugar, eggs, and vanilla extract; mix until smooth.
  2. Whisk together flour, baking soda, salt, and 1 teaspoon cinnamon in a separate bowl.
  3. Gradually fold dry ingredients into wet mixture, stirring gently until just combined.
  4. Mix brown sugar with remaining cinnamon to prepare the cinnamon swirl.
  5. Preheat oven to 350°F (175°C). Pour half the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  6. Add remaining batter on top, then sprinkle with the rest of the cinnamon sugar. Use a knife or skewer to swirl the cinnamon into the batter for a marbled effect.
  7. Bake for 60-70 minutes, until a toothpick inserted in the center comes out clean. Cool before slicing.

Notes

  • Use overly ripe bananas for best flavor and sweetness.
  • Mix just until combined to keep the bread moist and fluffy.
  • Fold in chopped nuts or chocolate chips for added texture.
  • Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
