Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup melted unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon, divided
- 2 tablespoons brown sugar
- Optional: chopped nuts or chocolate chips
Instructions
- In a large bowl, combine the mashed bananas with melted butter. Add sugar, eggs, and vanilla extract; mix until smooth.
- Whisk together flour, baking soda, salt, and 1 teaspoon cinnamon in a separate bowl.
- Gradually fold dry ingredients into wet mixture, stirring gently until just combined.
- Mix brown sugar with remaining cinnamon to prepare the cinnamon swirl.
- Preheat oven to 350°F (175°C). Pour half the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
- Add remaining batter on top, then sprinkle with the rest of the cinnamon sugar. Use a knife or skewer to swirl the cinnamon into the batter for a marbled effect.
- Bake for 60-70 minutes, until a toothpick inserted in the center comes out clean. Cool before slicing.
Notes
- Use overly ripe bananas for best flavor and sweetness.
- Mix just until combined to keep the bread moist and fluffy.
- Fold in chopped nuts or chocolate chips for added texture.
- Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
