- 1 1/2 cups of granulated sugar
- 1/4 cup of all-purpose flour
- 1/4 cup of freshly squeezed lemon juice
- Zest of 2 lemons
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup of flour and 1/4 cup of powdered sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13-inch baking pan. Bake for 20 minutes until lightly golden.
- In a separate bowl, whisk together the eggs and granulated sugar until smooth. Mix in the 1/4 cup of flour, lemon juice, and lemon zest. Pour this filling over the baked crust, spreading evenly.
- Return the pan to the oven and bake for an additional 20-25 minutes, until the filling is set but still slightly jiggly in the center. Remove from oven and let cool completely before slicing into squares.
