Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray and line with parchment paper for easy removal.
- In a large bowl, combine the melted butter and sugar. Whisk until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, lemon zest, and vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the lemon brownies to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust with powdered sugar if desired. Slice into squares and serve with your favorite beverage or whipped cream.
