- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup crumbled feta cheese
- 2 lemons, juiced and zested

- Salt and pepper to taste
Instructions
- Cook orzo in salted boiling water according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes per side.
- Stir in lemon juice and zest, then add cooked orzo and toss to combine.
- Remove from heat and sprinkle with feta cheese and chopped parsley.
- Serve immediately garnished with additional lemon slices if desired.
Notes
- You can substitute feta cheese with goat cheese for a creamier texture.
- For added richness, drizzle with a bit of olive oil before serving.
